Without doubt sirloin steak is the most popular steak cut sold at Crombies. We source our beef from Gavin Scott at Gateside Farm, Linlithgow some 15 miles from us. We hang our sirloins to maturity at 28 days and we 'french trim' them to remove the outer muscles and the sinew on the top.
